Cupcake
125g self raising flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon teaspoon salt
150 golden caster sugar
75g dark brown muscovado sugar
1 egg
75ml yoghurt
40ml vegetable oil
1/2 teaspoon vanilla extract
120ml boiling water
50g cocoa powder
1tsp coffee
150g chocolate chips – mix of white and milk
Nutella Buttercream
140g Unsalted Butter
250g Icing Sugaer
3tbsp Nutella
Makes 12 cupcakes
Cooking Time: 17mins
Oven Temperature 170*C fan
Method
- Pre heat oven to 170 degree Celsius (fan oven).
- Mix boiling water with cocoa and coffee and leave to cool
- Mix rest of the dry ingredients
- Mix all the other wet ingredients
- Combine all the wet and dry ingredients and stir.
- Divide mixture into 12 cupcake cases.
- Put mix of white and milk chocolate chips on top
- Bake for 17 minutes.
- Mix icing sugar, butter and Nutella until light and fluffy.
- Cool on a rack before decorating in buttercream.
