Recipe: Lemon Drizzle Cake

If you like lemon drizzle cake you have to try this recipe. It’s light, fluffy, moist and tangy and it turns out perfect every time. It tastes great without the glaze, however without it can look quite ordinary. So it depends what the occasion is. If it’s for a celebration the glaze helps bring it to life.

Ingredients

  • 125g caster sugar
  • 125g margarine
  • 125g self raising flour
  • 2 eggs
  • Dash of Milk
  • Dash of warm water
  • 1 tsp Vanilla bean paste
  • 1tsp baking powder
  • Zest of 2 lemons

Drizzle

  • Juice of 2 lemons
  • 80g caster sugar

Glaze (optional)

  • 2 tbsp icing sugar
  • Juice of 1 lemon
  • 1/4 tsp vanilla bean paste

Method

  1. Pre heat oven to 170 degrees fan
  2. Mix butter and sugar together until light and fluffy.
  3. Add water and milk to the eggs and mix
  4. Mix eggs into butter and sugar mix.
  5. Add in vanilla and lemon zest
  6. Add in sifted flour
  7. Put in a lined loaf tin
  8. Bake at 170 fan for 35mins
  9. Mix lemon juice and caster sugar for the drizzle and heat in a pan or microwave
  10. Poke holes in cake.
  11. Drizzle lemon syrup whilst cake is hot and ensure you cover the edges.
  12. Allow to cool in tin.
  13. If you wish to add the glaze, mix lemon juice and icing sugar with vanilla and apply to the cake when it has cooled and decorate.
